Measuring Fat and Moisture in Meat
Products Using AOTF-NIR Spectroscopy
Abstract:
The Brimrose software program
Transcal was used to transfer
spectral data of 140 corned beef
samples collected over a six-month
month period from a Foss NIR Systems
spectrometer to a Brimrose Luminar
Free Space spectrometer. The
calibration transfer was successful
and regression models were created
for fat and moisture in the corned
beef using the transferred spectra
and reference values. The results
for the models were excellent and
proved that the Brimrose Luminar
Free Space spectrometer can be used
to measure fat and moisture in meat
products.
