AOTF-NIR Determination of % Moisture
in Processed Cheese
Abstract:
A Brimrose Luminar Multiplexer
spectrometer connected to a
reflectance flow cell was used to
scan spectral data of cheese samples
with known reference values for
moisture. A certain level of percent
moisture cannot be exceeded and it
is important to maintain the
manufacturing process as close to
this level as possible to optimize
output. The results showed that the
Brimrose spectrometer is able to
provide accurate real-time results
of moisture in cheese to optimize
process control.
