Determination of Moisture and
Fat Content in Butter Using
AOTF-NIR Spectroscopy
Abstract:
A Brimrose AOTF-NIR Luminar
spectrometer was used to
scan spectral data of butter
for the purpose of measuring
moisture and fat content. It
is very important to keep
these contents at a certain
level and the Brimrose
spectrometer allows for
real-time measurements and
process control adjustments
in a matter of minutes as
opposed to conventional
methods that can take hours.
The calibration models for
moisture and fat content
clearly showed that the
Brimrose Luminar
spectrometer is able to
predict these parameters in
butter.
